The great confinements of summer 2020 have shown us how kitchens are more than a quick meal fix space. Long after getting back to our normal routines, the focus on cooking also shifted to as a recreational activity, healthy cooking and making environmentally conscious choices. The upcoming trends in food and kitchen show promise in the areas of experiential cooking, invoking nostalgia and products that promote the maker culture.

Reminiscing through cooking ​
Revisiting old traditions, recipes and tastes sparks an unparalleled sentimental response. Brands introducing new products with a twist of revisiting the past, especially of childhood years, builds a strong emotional connection to the product and kitchen experience. Products and kitchen spaces invoking this nostalgia, gets easily associated to the authenticity of the final product, thus providing an emotional escape to possibly better cooking experience. For eg- products made with better ergonomics and materials make it easier to make and fry chakalis a popular Maharashtrian snack. Publishing old recipe cook-books to reconnect consumers to their roots.

Cooking enthusiasts are frequently on a lookout for experimenting with different cuisines. With evolving kitchen spaces, there is a tendency to accommodate this interest. This may be in the form of professional equipment and/or ingredients to reduce the dependency on producers and creating on their own. This is apparent when we see consumers growing their own ingredients in kitchen gardens or opting for artisan DIY food kits or brewing batches of beer and wine at home. Few of these products keep the cooking interest alive, in a quick time frame. This establishes a sense of accomplishment and authenticity that drives consumers to keep exploring in kitchen space.
